salmon with red pepper & corn salsa

(NAPSI) - According to the Institute of Medicine, Americans’ daily sodium intake should be only 1,500 milligrams per day, but most Americans consume more than 4,000 mg of salt a day, often without even realizing it due to “hidden” salts in canned goods and processed foods. Too much sodium can lead to serious health problems such as high blood pressure, stroke, and heart failure.

The good news is that you can help avoid high blood pressure, also known as hypertension, before it’s an issue by following a diet rich in fruits and vegetables and low in sodium – a major contributor to hypertension.

This recipe proves that an eating plan that is low-salt doesn’t have to mean low-flavor! It’s bursting with nutritious, flavorful fish and vegetables, but is very low in sodium.

1 T Super Herbal No Salt (see recipe below)
1 red bell pepper, chopped
1 red onion, minced
1 C fresh corn kernels
2 T lemon juice
1 T olive oil
1 T honey

Combine first 7 ingredients and refrigerate. Spray salmon steaks with olive oil and sprinkle with Mrs. Dash® Chicken Grilling Blend™. Bake salmon for 10-12 minutes at 400 degrees. To complete the dish, add minced parsley to the corn salsa and serve over the cooked fish. Serves 4

SUPER HERBAL NO-SALT

Here’s an herbal blend you can make yourself that has only 1 milligram of sodium! Most Rochester area supermarkets or natural food stores should have the ingredients.

1 T black pepper
1 T celery seeds
1 T onion powder
2¼ tsp cream of tartar
1½ tsp garlic powder
1½ tsp powdered orange peel
1½ tsp arrowroot
1½ tsp sugar
¾ tsp sour salt (powdered citric acid)
½ tsp white pepper
½ tsp dill weed
½ tsp dried thyme, crumbled
¼ tsp plus pinch powdered lemon peel
¼ tsp cayenne pepper

Combine the ingredients in a food processor, coffee grinder, or blender. Process for 10 seconds. Pour the ground ingredients into a salt shaker using a funnel. Store the remainder in a dark place that is cool and dry in order to preserve the flavor.
